Poptails could not be simpler to make and are a great way to use ripened summer fruit, herbs, and colorful blooms from your organic garden or farmer’s market purchases. Chemical-free pansies, rose, calendula and borage petals are just a few edible flowers we used to add more color and garden style. Add to that a selection of your favorite sparkling wines, champagnes, and prosecco. We used locally produced Korbel California Champagne and Korbel Prosecco for our poptails.

Of course, we have included ‘mocksicle’ recipes, an alcohol-free version of our frozen poptails that are kid-friendly treats. Bubbly or not, these refreshing popsicles are perfect on a hot summer day!  Classic champagne cocktail recipes become frozen adult treats. Just substitute white grape juice to make a non-alcoholic mocksicle.
